September the month of grape harvest !! Greece has more than 200 indigenous grape varieties almsost a “terra incognita”. One of them is named “strawberry” strenght to his taste and skin colour. It matched perfect with Halloumi or Talagani cheese.
SALAD WITH “STRAWBERRY” GRAPE AND HALLOUMI CHEESE
INGREDIENTS
FOR 4-6 PEOPLEINGREDIENTS OF SALAD:
½ curly green salad
½ lettuce green salad
½ wild rocket green salad
a cup red grape
200 gr halloumi cheese from Cyprus or talagani cheese from Messinia Greece
INGREDIENTS OF VINAIGRETTE:
100 ml Greek extra virgin olive oil
40 ml Italian white balsamic vinegar
1 tbsp mildness mustard
1 tsp Greek thyme honey
Salt
Freshly ground pink pepper
IMPLEMENTATION
Preparation Time: 20' - Cooking Difficulty: EasyWash the salad very well and drain it. Cut into small pieces by hand.
Mix the ingredients of vinaigrette in mixer except the oil. Throw the oil slowly at sluggishness until the ingredients are well combined.
Cut the halloumi cheese into pieces and grease it lightly. Bake the cheese on a cast iron pan.
Serve in a salad bowl, pour the vinaigrette, mix well, add grapes and the halloumi cheese.
Tip
Alternatively we can put peels of a spicy Greek kefalograviera (a kind of gruyere cheese)
