Lazarakia are delicious small, fluffy, sweet breads. They are shaped like a man wrapped in grave clothes (just as Lazarus is depicted) and they symbolize the Raising of Lazarus. We knead them and bake them on Lazarus Saturday.
Lazarakia Buns
INGREDIENTS
20 PIECES400 g water, lukewarm
1 tablespoon yeast
150 g granulated sugar
50 g olive oil
1 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon cardamom
1/4 teaspoon salt
800 g all-purpose flour
50 g raisins
50 g walnuts, coarsely chopped
40 cloves
IMPLEMENTATION
Preparation Time: 15 ’ - Cooking Time: 30' Difficulty: EasyIn a mixer, add the water, yeast and sugar.
Whisk until the yeast and sugar dissolve and let it set for 10 minutes.
Add the cinnamon, olive oil, ground cloves, salt, cardamom, and flour.
Mix until the ingredients come together and a dough is formed, for at least 8’-10’.
Then cover the dough with a kitchen towel and let it rest for 30’.
Preheat the oven to 170* C on the fan function.
Divide the dough into 20 pieces and shape into balls.
Each ball will become a little Lazarus so you will have to cut off a small piece and shape it for the body and a smaller one and shape it for the arms.
In a bowl prepare the filling by combining the raisins and coarsely chopped walnuts.
Knead and shape little Lazarus’s bodies in an oblong shape.
Fill with 1 teaspoon of the filling and seal. With the smaller piece of dough, shape into 2 arms, crisscrossing in the back and bringing them to crisscross again in the front.
Insert 2 whole cloves in the head to create the eyes.
Bake the little Lazarus buns onto a baking pan lined with parchment paper, for 20’-30’, until golden.

It is a sweet white wine, from the charismatic Moschato variety of Alexandria.
The intense citrus aroma harmoniously coexists with the exuberant taste of fruit, flowers, honey and raisins.
It pairs ideally by fruit, nuts, sweets or alone.
