Spetsofai is a traditional, winter spicy food of Greek cuisine with fried sausages, red and green pepper and tomato sauce. Characteristic are the long, red, sweet pepper and the intense flavors of the village sausages, which are commonly used. The spetsofai from Pelion mountain is the most well known in Greece.

INGREDIENTS
FOR 4 PEOPLE500 gr. Village sausages
6 green and red peppers
4 carrots
2 leeks
2 dried onions
1 clove garlic
500 gr. chopped tomatoes (along with their juice)
1 tb.sp. double concentrated tomato paste
125 ml Greek olive oil
250 ml Greek white wine
½ t.sp. cumin
½ t.sp. nutmeg
1 tb.sp. of fresh thyme
Fresh black pepper
Flower of Salt
A little fresh thyme for styling
IMPLEMENTATION
Preparation Time: 40' - Cooking Difficulty: EasyCut the onions, leeks and carrots into slices, the peppers into sticks and the garlic into thin slices.
Cut the sausages into slices and fry them lightly without olive oil in a non-stick pan.
Remove from the pan and drain the fat. In a saucepan, heat the olive oil and sauté all the vegetables, to get a nice golden color.
Add the sausages, stir and simmer with the wine. Dissolve the tomato paste in warm water.
Add the tomato paste and the tomatoes as soon as alcohol evaporates.
Once they get boiled, add the spices and thyme. Add salt if necessary.
Cook at medium heat for 15′- 20 ‘until our vegetables get soften and our sauce sets.
Tip
You can enrich the taste with 4-5 sun-dried chopped tomatoes
